This is one of the easiest recipe to make and always an all time favorites for family and friends. After trying it, quite a few of moms started to ask me on how to make it. This is just a modified version of any chicken rice found in southeast asian countries (Indonesia, Malaysia, Singapore).

Southeast Asian Chicken Rice
Ingredients
- 3 cups jasmine rice (uncooked)
- 3 tsp chicken powder
- 5 slices 1-cm thick ginger
- 3 cloves garlic
- 1 tbsp cooking oil
- 2-3 tbsp light soy sauce
- 1 tbsp sesame oil
- 1.5 lbs chicken breast (boneless and skinless)
- 5 cloves minced garlic
- 1 clove shallot
- 1 small ginger
- salt
Marinade
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp sweet soy sauce
Instructions
Rice
- Wash and soak rice.
- Heat oil in pan, fry the ginger and garlic until fragrance.
- Add rice, soy sauce and sesame oil to the pan, then mix.
- Transfer rice to rice cooker.
- Put in the water and/or chicken broth accordingly like when u make rice usually.
- Season with a pinch or two of salt.
Chicken
- Cut chicken breast into small pieces.
- Marinade chicken with soy sauce and sesame oil for at least an hour.
- Saute garlic, ginger and shallot, then add a pinch of salt to taste.
- Add the marinaded chicken.
- Once cooked, add sweet soy sauce.
